Smoky M.L.T. Bagel Sandwich Recipe. M.L.T. is the vegetable copycat of a BLT. M.L.T. standing for mushroom, lettuce, and tomato! Cut the brown portobello mushroom thin. Marinate the mushrooms in the smoky marinade for about 5 minutes. There are different combinations of lettuce and tomato to your preference. I decided to use a nice crispy, fresh arugula. Arugula is full of antioxidants. Found a red beefsteak tomato for this delicious bagel sandwich. This vegan meal can be prepped for breakfast, lunch, or dinner. Throughout the baking process I applied the marinated to the baked mushrooms.

Ingredients:





  • 1 Sesame Bagel

  • 5 Brown Portobello Mushrooms

  • 1/4 Cup Arugula

  • 1/2 Tbsp Vegan Mayo

  • 1 Tomato - 2 Thin Slices


Mushroom Marinade:

  • 1 Tbsp Olive Oil

  • 2 Tbsp Pure Maple Syrup

  • 2.5 Tbsp Apple Cider Vinegar

  • 1 Tbsp Soy

  • 1 Tsp Miso

  • 1/2 Tsp Garlic Powder
