Vegan Ceviche - Hearts of Palm Ceviche Recipe. Exquisite flavors as a refreshing snack for the summer! Hearts of palm is the fresh vegan substitute for seafood. This bite size snack can be served with chips or over Latin American tostada. Lime and lemon mixed together serve as an acidic marinade for the vegetables. I let my ceviche sit for 10 minutes for the flavor to absorb. A tip for a more "fishier" flavor, you can add chopped nori (seaweed).
