Brazilian Coxinha Recipe. These Brazilian snacks are so flavorful and brings people together. This is one of three ways to make cohinxas. Coxinhas means "little thigh" in Brazilian Portuguese. The savory dough made of flour and/ or potatoes is shaped like a drumstick or tear drop. I made this with a friend so I used "Beyond" Chicken Pieces instead of chicken. Depending if you are vegetarian or vegan you can use dairy free or regular cream cheese. I used Violife cream cheese and Aldi's Earth Grown Mozzarella Cheese. For vegans try using a different cream cheese as Violife was too liquidy and wasn't stable for this recipe. Brazilians usually fry their coxinhas in vegetable oil, but I used an air fryer as a healthy alternative. Make this beloved Brazilian street food in your kitchen!

Ingredients:


*Need Food Processor and Boiling Salt Water For Potatoes

  • 3 Red Potatoes

  • 1 Tbsp Butter (Vegan - Dairy Free Buttery; Regular - Whole Fat Butter)

  • Cream Cheese (Vegan - Vegan Cream Cheese; Regular - Thick Cream Cheese or Catipury)

  • Mozzarella Cheese (Vegan - Earth Grown Mozzarella; Regular - Shredded Mozzarella)

  • 1 Egg or 1 Egg From Plants

  • 4 Pieces of Chicken or 1 Bag Beyond Chicken Pieces

  • 1/2 Purple Purple Onion

  • 1/2 Large Carrot

  • 1 Bay Leaf

  • 1 Tbsp Vegetable Better Than Bouillon

  • 1/2 Lime

  • 1/2 Cup Water

  • 2 Tbsp Tomato Sauce

  • 1 Cup Panko Bread Crumbs

  • *Spray Vegetable Oil


Seasoning:

  • 1.5 Tsp Salt

  • 1/2 Tsp Pepper

  • 1/2 Tbsp Paprika

  • 1/2 Tbsp Garlic Powder

  • 1/2 Squeezed Lime


Flour Potato Mixture:

  • 1 Cup Broth (Vegan - Vegetable Broth; Regular - Chicken Broth)

  • 1 Cup Milk (Vegan - Oat Milk; Regular - Milk)

  • 2 Cups Flour

  • Mashed Potato



Instruction Guide:


  1. Prep all your ingredients. Regular Brazilian coxinha and vegan ingredients have been provided.

  2. Boil red potatoes on high.

  3. Add 1/2 Cup water to pan. Chop 1/2 carrot to medium dice, purple onion, and 1 bay leaf.

  4. Boil your chicken on medium heat for 13 minutes. Turn off heat and let sit until potatoes are finished.

  5. Drain potatoes and peel with knife carefully. Mash it with butter.

  6. Using a food processor, shred chicken without the water. Add scallions to food processor. *Tip: If have enough water can use as broth for the flour potato mixture.

  7. Add your lime and seasonings to the shredded chicken mixture. *Tip: The vegan chicken will look different than regular shredded chicken.

  8. Using a pan heat up milk, broth, and the mashed potato on medium heat.

  9. Add flour mixture to thicken. Incorporate your chicken mixture.

  10. Place chicken potato mixture in fridge for 30 minutes to cool. This will allow for an easier formation for coxinhas

  11. In a bowl add your egg and another bowl add your panko bread crumbs for coating.

  12. After 30 minutes start your coxinha prep.

  13. Grab a handful of chicken potato mixture. Make a hollow hole in a ball to stuff your mozzarella and cream cheese. Form in a tear drop shape.

  14. Batter in egg and panko.

  15. Makes about 6 regular size cohinxas. Spray your vegetable oil.

  16. Air fry 350 ° F for about 15 minutes until lightly browned.

  17. Wait 5 minutes before eating...enjoy!
