One Pot Vegan Pumpkin Walnut Chili is one of the best fall recipes. Easy one pot meal I made for a party of 10 people. Some fun toppings for chili bowl are sour cream, crispy onion flakes, chopped avocado, or scallions. Pumpkin walnut chili has an nice finish with a bit of a soft crunch from the walnuts. This delicious, autumn recipe is a must for the fall season. Dairy free, meat less, and gluten free! For those with nut allergies can omit the walnuts. Chili can set for 30 minutes before serving with a thicker consistency.

Ingredients:



  • 30 oz Can Pinto Beans

  • 15 oz Can Black Beans

  • 15 oz Can Kidney Beans

  • 3/4 Can Pumpkin Puree

  • 15 Oz Can Diced Tomatoes

  • 1/2 Diced Onion (White)

  • 2 Tbsp Vegetable Oil

  • 1/3 Cup Chopped Walnuts

  • 2.5 Cups Water

  • *Optional Thickener: 1-2 Tsp Corn Starch


Seasoning

  • 1/2 Tbsp Paprika

  • 1/2 Tbsp Pumpkin Seasoning

  • 1/2 Tbsp Garlic Powder

  • 1/2 Tbsp Nutmeg

  • 1/2 Tbsp Adobo

  • 1/2 Tbsp Oregano

  • 2 Tsp Salt

  • Splash Of Black Pepper

  • 1 Tbsp Brown Sugar
