One Pot Vegan Pumpkin Walnut Chili is one of the best fall recipes. Easy one pot meal I made for a party of 10 people. Some fun toppings for chili bowl are sour cream, crispy onion flakes, chopped avocado, or scallions. Pumpkin walnut chili has an nice finish with a bit of a soft crunch from the walnuts. This delicious, autumn recipe is a must for the fall season. Dairy free, meat less, and gluten free! For those with nut allergies can omit the walnuts. Chili can set for 30 minutes before serving with a thicker consistency.

30 oz Can Pinto Beans
15 oz Can Black Beans
15 oz Can Kidney Beans
3/4 Can Pumpkin Puree
15 Oz Can Diced Tomatoes
1/2 Diced Onion (White)
2 Tbsp Vegetable Oil
1/3 Cup Chopped Walnuts
2.5 Cups Water
*Optional Thickener: 1-2 Tsp Corn Starch
Seasoning
1/2 Tbsp Paprika
1/2 Tbsp Pumpkin Seasoning
1/2 Tbsp Garlic Powder
1/2 Tbsp Nutmeg
1/2 Tbsp Adobo
1/2 Tbsp Oregano
2 Tsp Salt
Splash Of Black Pepper
1 Tbsp Brown Sugar
