Peanut Butter Ramen Noodles Recipe. Crunchy peanut butter sauce with instant ramen noodles is an easy recipe for the work week. Only 15 minutes to make, which is quick for a meal. If you have to boil an egg, this recipe will be a bit longer. I had pre boiled eggs already in my fridge from another day. (Tip always have boiled eggs in your refrigerator... there's many easy & efficient recipes to use with eggs ready for use!). Ramen is Japanese noodles which originated from China. Idea is a soupy broth, where the noodles are cut instead of "pulled". The 5 important elements for Chinese ramen: men - noodles; dashi - stock of soup; tare-sauce; topping ingredients; and oil/fat. I didn't use my seasoning packet for this recipe, because I only had the meat flavored meat packet. If you get the vegetable ramen noodle packet, feel free to add that to this flavorful recipe.

1 Pack Instant Ramen
2.5 Cups Vegetable Broth
1/4 Cup Peeled Carrots
1 Tsp Shallot
1 Boiled Egg
4-5 Chopped Brown Bella Mushrooms
12 Edamame
1 Tbsp Sesame Oil
1/4 Can Coconut Milk
Peanut Butter Sauce : *Makes 2 servings
4 Tbsp Crunchy Peanut Butter
1/4 Cup Soy
1 Tsp Honey (Lavendar Honey)
2 Tbsp Vegetable Broth
1 Tbsp Sweet Chili Sauce
1 Tsp Lime
1/2 Tsp Ginger
1/2 Tsp Garlic Powder
