Summer Vegan Vegetable Tacos Recipe! I use this amazing on the go recipe with leftovers from my fridge and fresh produce. Inspired by American- Mexican version of a crispy corn taco with savory fillings. Authentic Mexican tacos are handmade as soft corn tortillas made of corn of a specific region. 2 Tbsp Red Onion
3 Tsp Adobo
1 Tbsp Salt
2 Tbsp Cilantro ( Substitute Fresh-Better Flavor)
1 Tbsp Cumin
1 Tbsp Garlic Powder
Salsa:
1 Large Tomato
1/2 Red Onion
2-3 Tbsp Olive Oil
1 Tsp Cilantro Seasoning
Salt & Pepper
1 Tbsp Apple Cider Vinegar
Splash Lime
2 Cloves Garlic
Salty- Lime Splashed Avocado
Shredded Cheddar Cheese ( Vegan or Regular)
Garlic Black Beans
Leftover Rice
Crispy Corn Taco Shells
