Vegan Fajitas with Tropical Mango Salsa Recipe. Healthy and easy fajitas to make on stovetop. I put my filling into flour tortillas and topped it with shredded cheese, sour cream, and mango salsa. Tropical flavor will have you feeling like you are on vacation in paradise. Tex-Mex fajitas are usually grilled or baked on a sheet pan. I cooked my fajita fillings over stovetop. Other toppings that are great ideas include: jalapenos, guacamole, regular salsa, and avocado. Enjoy this juicy meal!
