Air Fryer Creamy Spinach Tomato Stuffed Salmon Recipe. Easy recipe to make for the summer. The creamy spinach tomato sauce made the stuffed salmon more succulent. Make sure to pat the salmon with a paper towel before adding the dry rub. This delectable meal is great for a meal prep, date night, or a quick dinner. Add this to your 40 minute meals. Ingredients:
.60 lb Fresh Salmon
2 Tbsp Butter
2 Cup Spinach
1 Tsp Minced Garlic
3/4 Cup Heavy Whipping Cream
1/2 Tomato
2 Tbsp Vegetable Oil
3 Tbsp Parmesan Cheese
Squeezed Lemon
Seasoning:
1/2 Tbsp Salt
1/2 Tbsp Paprika
1/2 Tbsp Lemon Pepper
1 Tsp Cardamom
1 Tsp Coriander
Instruction Guide:
Add diced tomatoes to vegetable oil in medium heated pan for 2 mins.
Put in spinach and sautee until less watery. Put on side to cool down.
In the meantime add 1 tsp seasoning to softened cream cheese and put in the parmesan cheese.
Chop Atlantic Salmon into 2 inch slices.
Go back to the bowl of the cheese mixture and add the spinach tomato from the pan. Mix until clumps become creamy.
Squeeze Lemon.
Carefully slice the salmon in half without cutting through the salmon fully. A "pocket" will be created.
Using a spoon, stuffed the salmon carefully without breaking it. *Tip - Save 1/3 of the stuffing for the creamy sauce.
Use some of the seasoning to dry rub the salmon.
Set the air fryer to 375 ° F for 13 minutes. Insert stuffed salmon.
As the salmon is cooking in the air fryer, add the butter and minced garlic on medium heat to pan.
Add the rest of the seasoning - should be about 1.5 tsp to the pan along with the leftover spinach tomato cheese mix.
Add Heavy Whipping Cream and change heat to low for about 5 minutes. Turn off burner.
If serving with rice, prepare rice in a bowl to flip over for aesthetic.
Place salmon on top of rice. Enjoy with your creamy spinach tomato sauce.
