Grilled Vegetable Tofu Skewers Recipe. Healthy and high protein vegan recipe with my special Italian seasoning sauce. The wet rub may cause the tofu to break apart. Don't forget to press tofu. Marinate for at least 15 minutes. When placed on grill leave it on aluminum foil. It will allow the skewers to gain a crisp but smoky charred flavor. Vegetable tofu skewers was so easy to assemble. Alternate the mushroom, tofu, bell peppers, and onions. My friends had lots of plant based options that accomodated the skewers. There was rice, Jamaican black beans, breaded mac & cheese, sweet plantains, cheese stuffed mushrooms, and homemade baked cheese pizza.

Grill: High Heat Off Fire

Grill Time: 15 Minutes

Prep Time: 10 Minutes

Total: 40 Minutes



Ingredients:



*Made 4 Skewers

  • 1 Tbsp Avocado Oil

  • 1/2 Extra Firm Tofu

  • 1 Tbsp Avocado Oil

  • 1/2 Green Bell Pepper

  • 1/2 Red Bell Pepper

  • 1/3 Purple Onion

  • 4 Brown Bella Mushrooms

  • Bamboo Skewer Sticks

  • Aluminum Foil


Seasoning:

  • Sprinkle Salt

  • Sprinkle Lemon Pepper

  • 1/4 Tsp Paprika

  • 1/4 Tsp Garlic Powder

  • 1/8 Tsp Italian Seasoning

  • 1/8 Tsp Nutmeg

  • 3 Tbsp Traditional Italian Dressing & Marinade

  • Squeeze 1/3 Lemon



Instruction Guide:


  1. Gather ingredients

  2. Press extra firm tofu for at least 30 minutes. *Tip: I used paper towels on both sides with weight on top.

  3. Chop vegetables and tofu medium size to fit on skewers.

  4. Make marinade and coat the vegetables / tofu in bowl. Marinade for at least 15 minutes.

  5. Alternate vegetables and tofu on skewers. This recipe made about 4 skewers.

  6. Put on grill - high heat side of the fire where it cooks but gets charred as it grills.

  7. Enjoy with other sides or eat as is!
