Air Fryer Italian Spaghetti Squash is a must add to your recipe book! Air fryer recipes are easy to complete. I like to bake 365 for the first 15-20 minutes until Spaghetti Squash is brown. Then, add the vegetables, milk, and cheese the last 5-7 minutes. Healthy recipe that is quick and delicious. Substitution for coconut milk can be heavy whipping cream, almond milk, oat milk, or regular milk. Spaghetti Squash can be made various ways. Being Italian, I miss comfort food recipes since becoming vegan/ vegetarian. Tomato sauce can be a great addition of acid to this dish.

Ingredients:



  • 1/2 Cup Coconut Milk

  • Squeezed Lemon

  • 1/4 Cup Shredded Mozzarella Cheese

  • 1-2 Tbsp Vegetable Oil

Vegetables:

  • 1-2 Tbsp Vegetable Oil

  • 1/2 Spaghetti Squash (Peeled and Chopped)

  • 1/4 Red peppers (Jar)

  • 1/3 Cup Spinach

  • 2 Tbsp Sun Dried Tomatoes


Seasonings:

  • 2 Tbsp Italian Seasoning

  • Sprinkle Salt

  • 1/2 Tbsp Paprika

  • 1/2 Tbsp Garlic powder

  • 1-2 Tbsp Turmeric

* Rosemary on top
