Autumn Burrata Salad With Arugula And Butternut Squash Recipe. Specialty recipe curated for the Fall / Autumn season with the ingredients in the season. Burrata cheese adds a soft buttery taste with its mozzarella cheese consistency. The crunch of the sweet pomegrante seeds, roasted pepitas, and candied walnuts add a perfect balance. Roasted pepitas are pumpkin seeds. Butternut squash can be baked or air fried. I prefer the Gia Russa balsamic glaze from Italy. 4 Cups Organic Arugula
1/4 Cup Pomegranate Seeds
1/4 Cup Dried Cranberries
2 Tbsp Roasted Pepitas
1/2 Lime
1/2 Diced Gala Apple
1/2 Cup Walnut
1.5 Tbsp Butter
Burrata Cheese
Drizzle Olive Oil
Drizzle Balsamic Glaze
2.5 Tbsp Sugar Cane
Seasoning:
2 Tbsp Garlic Powder
1 Tbsp Rosemary Leaves
1/2 Tbsp Salt
1 Tbsp Pumpkin Pie Spice
Instruction Guide:
Gather ingredients and set oven to 390 ° F .
Use cleaver knife to dice butternut squash including the outside skin.
Add rosemary leaves, pumpkin pie spice, salt, and garlic powder. Bake until softened at 390 ° F on baking dish.
Meanwhile chop your walnuts, peel pomegranate seeds from fruit, and gala apple.
Set Medium Low heat a pan for your candied walnuts.
Add the sugar cane to melted butter. Keep an eye on the walnuts as it can burn quickly. Fry for 5 minutes until nuts are a light caramelized brown color.
Set walnuts on baking wax paper. The nuts will form a hard caramelized shell.
As butternut squash cools, prepare your arugula salad. Mix arugula in freshly squeezed lime.
