Brazilian Chicken Salad - Salpicão de Frango Recipe! This special meal a family member showed me is usually prepared around Christmas time in Brazilian culture. There are many variations of Salpicão de Frango, depending on the family & region originated in Brazil. Other ingredients not listed include adding ketchup, vinegar, mustard, onion, scallions, hearts of palms, or apples. You can serve over a bed of rice with potato stixs (Traditional Batata Palha) and farofa! Two methods of cooking the chicken breast is in crockpot like I did on "High" setting for 2 hours or stove top for 45 minutes. Make sure to add this versatile dish to your next gathering, even around the Christmas holidays.

Ingredients:



  • 4 Cooked Shredded Chicken Breast

  • 1/4 Cream Cheese or Brazilian Catupiry Cheese

  • 1/2 Can Media Crema or Piracanjuba Table Cream

  • 1 Cup Shredded Carrots

  • 1 Can Peas

  • 1 Can Corn

  • 1 Tbsp Salt

  • 1 Tbsp Olive Oil

  • 1 Cup Mayonnaise

  • 1 Tbsp Parsley

  • 1/2 Jar Kalamata Olives

  • 1 Cup Mozzarella Cheese

  • 1/2 Cup Raisins

  • Potato Stix - Batata Palha Traditional

  • *Optional Squeeze Lemon or Lime
