@bunnieskitchen Vegan Italian Pasta Salad Recipe

VVegan Italian Pasta Salad Recipe. Perfect for a meal prep or a potluck event. Italian pasta salad is originally made with meat, but I modified the ingredients to make it vegan friendly. Italian pasta salad has Mediterranean inspiration due to American-Italian culture of using ingredients on hand. I used "Follow Your Heart" brand Parmesan Cheese, as well as Aldi's "Earth Grown" Mozzarella. Vegetarians can substitute the vegan cheese for regular cheese. Italian pasta salad is a dish best served cold. I recommend Rotini style pasta. There's many variations of this recipe, but this Italian pasta salad will be your favorite colorful flavor fusion!

Vegan Italian Pasta Salad Recipe, Purple Onion, Roma Tomato, Orange Bell Pepper, Yellow Bell Pepper, Green Bell Pepper, Sun-Dried Tomatoes, Cooked Pasta, Olive Oil, Italian Seasoning, Italian Dressing, Mozzarella, Parmesan, Salt, Artichoke Hearts

Course: Lunch / Dinner

Stovetop: Medium Heat

Stovetop Time: 15 Minutes

Prep Time: 10 Minutes

Total: 25 Minutes

Ingredients:

  • 1 Box Rotini Pasta

  • Italian Dressing

  • 1/2 Can Black Pitted Olives

  • 1/3 Cup Sun-dried Tomatoes

  • 1/2 Roma Tomato

  • 1/2 Yellow Bell Pepper

  • 1/2 Orange Bell Pepper

  • 1/2 Green Bell Pepper

  • 1/4 Purple Onion

  • Follow Your Heart Parmesan Cheese

  • Aldi Earth Grown Mozzarella Cheese

  • 1 Tbsp Olive Oil

  • *Optional: Quartered Marinated Artichoke Hearts

Seasoning:

  • 1/2 Tsp Salt

  • 1/2 Tsp Italian Seasoning

Instruction Guide:

  1. Gather ingredients. Start boiling water with sprinkled salt for pasta. Cook on medium heaty until softened.

  2. Drain pasta and set aside to cool. Add olive oil. Tip: This helps the pasta not stick together.

  3. Chop your bell peppers, olives, tomato, sundried tomato, and artichoke hearts into small diced.

  4. Once pasta is cooled down a bit, add your vegetables.

  5. Add Italian dressing with your seasonings. Finish off with cheese as desired.

  6. Mix thoroughly. I recommend to put into fridge for 3 hours. Best results are overnight when the pasta soaks up the flavors.
