Brazilian Empadão De Vegetais - Vegetable Pot Pie Recipe. Traditional, savory pie made with easy ingredients and a creamy sauce. Empadinhas are a mini pot pie which I made. Preferred to make with requeijão, which is a Brazilian cream cheese; can substitute with regular cream cheese. Served over rice and potato fries for a nice crunch. Tart can be filled with chicken, tuna, or red meat. Crust is flakey and buttery. Enjoy this delicious recipe for lunch, dinner or a snack.

Ingredients:
*Mini Springform Pan
Dough for Crust :
2 Cups Flour
1/2 Cup Butter
1 Egg Yolk
1 Tsp Salt
2-3 Tbsp Water
Egg Wash (Brush Top Pie)
Vegetable Filling:
3 Tbsp Vegetable Oil
1 Roma Tomato
1/2 Orange & Yellow Bell Pepper
3 Tbsp Red Onion
1 Cup Mushroom (Baby Portobello)
1/2 Cup Brazilian Requeijão / Cream Cheese
2 Tbsp Fresh Parsley
1/4 Cup Tomato Sauce ( I Used Vodka Sauce)
*Optional 2 Tbsp Diced Green Olives
Seasonings:
2 Tsp Salt
1 Tbsp Oregano
2 Tsp Paprika
1 Tsp Black Pepper
