You can substitute vegan salmon with regular salmon as well as my vegan cheese/milk/butter products for regular. This Italian recipe will make you feel like you were transported to Italy. I like to brown my sun-dried tomatoes with a burnt crisp.

Course: Lunch / Dinner

Stovetop: Medium - Low Heat

Stovetop Time:  25 Minutes

Prep Time: 5 Minutes

Total: 30 Minutes



Ingredients:



*Small Garlic Grator


  • Salmon Filet - Vegan Salmon From New School Foods

  • 2 Tbsp Sun-dried Tomatoes

  • 3 Cups Pre Made Gnocchi

  • 1/4 Cup Parmesan Cheese - Follow Your Heart Vegan Parmesan

  • 2 Tbsp Butter - Vegan Miyoko Butter

  • 1.5 Cups Fresh Spinach

  • 1/3 Cup Heavy Cream - Califa Farms Vegan Heavy Cream

  • 3 Garlic Cloves

  • 3 Tbsp White Wine - Kwaya Organic White Wine

  • Pot of Boiling Water and Salt

  • 1 Tbsp Avocado Oil



Salmon & Potato Seasoning:

  • 1/3 Tsp Italian Seasoning

  • 1/4 Tsp Salt

  • Sprinkle Pepper




Instruction Guide:


  1. Gather ingredients. Let Salmon sit out at room temperature.

  2. In one pot boil water and salt for the gnocchi. About 10 minutes on medium heat.

  3. In a pan, add avocado oil and set to medium heat.

  4. Season salmon with salt and pepper. Cook each side for several minutes until salmon has a browned crust. *Tip this vegan salmon needs to be cooked a little longer than 5-7 minutes to be fully cooked.

  5. Take out the salmon and lower heat.

  6. Add your butter, then sundried tomatoes and start grating your garlic. *Tip: 2 minutes; I like my sundried tomatoes blackened a bit.

  7. If desired some more salt and pepper.

  8. Pour wine ; insert your salmon to cook in pan for 3 minutes to absorb the flavor. Remove again.

  9. I like sauteed gnocchi with a golden crisp. Rinse your spinach to add and cook for a minute.

  10. Whole milk and parmesan will make the pan creamy and sauce like. Turn off heat. Add more parmesan for a cheesier flavor.

  11. I added my salon on top with some more vegan parmesan!
