For pescatarians, you can use regular salmon filet to serve over potatoes with the dill sauce. The best dill sauce always combines yogurt and mayonnaise with an acidic tart flavor from the lemon. I used the "So Delicious " Vanilla Yogurt with Plant Based Hellman's Mayo - Vegetarians / Pescatarian can substitute for regular mayo & yogurt if preferred.

Air Fry Bake Oven: 400 ° F

Air Fry Time: 20 Minutes

Stovetop: Low - Medium Heat

Stovetop Time:  10 Minutes

Prep Time: 5 Minutes

Total: 30 Minutes



Ingredients:




  • Salmon Filet - Vegan Salmon From New School Foods

  • 2 Red Potatoes

  • 1/2 Squeezed Lemon

  • 3 Pieces Dill Herb

  • 11 Green Beans

  • 2 Tbsp Plant Based Mayonnaise

  • 2 Tbsp Plant Based Yogurt

  • 1 Tsp Minced Garlic

  • 1/4 Cup Water

  • 2 Tbsp Olive Oil

  • 1 Tbsp Vegan Cheddar Shredded Cheese


Salmon & Potato Seasoning:

  • 1/2 Tsp Paprika

  • 1/2 Tsp Garlic Powder

  • 1/4 Tsp Salt

  • Sprinkle Pepper




Instruction Guide:


  1. Gather ingredients. Let Salmon sit out at room temperature.

  2. Dice red potatoes medium size and the green beans to small.

  3. Add potatoes to air fryer oven to bake at 400 ° F for 13 minutes. Add 1 Tbsp olive oil and half of the seasonings to marinate the potates.

  4. Meanwhile, make your dill yogurt base. Add 2 Tbsp mayo with yogurt. I recommend a dash of salt.

  5. Chop dill into small pieces using a cleaver knife. Add to yogurt sauce to set in fridge.

  6. On low heat add olive oil. Marinate salmon in rest of seasonings. Heat on each side for about a minute for a crisp sear.

  7. Chop salmon into small pieces. *Tip add to air fryer bake for at least 5 minutes when potatoes are done.

  8. Change stove top to medium heat using the same pan for salmon for the green beans.

  9. Add water and minced garlic. Cook for 4 minutes until crispy, but tender.

  10. Obtain your kitchen plate. Set the dill yogurt base on the bottom of plate. Add potatoes.

  11. Then, add your salmon and green beans pieces. Feel free to add some squeezed lemon. I love adding the vegan cheddar cheese on top.
