Crispy Vegetable Fritters Recipe. Italian style created 2 ways. About 5 minutes each side. For this recipe uses cornstarch instead of flour for its crispy exterior texture. Best part is it is vegan! For those who want a substitution, use regular egg in place of flax seed egg. Version 1 of Crispy Vegetable Fritter: drizzle of pomegranate Balsamic glaze with roma tomatoes( in shape of a rose). Version 2: Slice 2 thin roma tomatos & 2 basil leaves. So delicious once fried!

Stovetop: Medium-High Heat

Course: Lunch/Dinner/Snack

Cook Time: 15 Minutes

Prep Time: 5 Minutes

Total: 20 Minutes



 

Ingredients:



  • 1 Cup Zucchini ( 1 large) Grated

  • 2 Tbsp Red Onion Grated

  • 1/4 Cup Red Bell Pepper Grated

  • 1 Flax Seed (1 Tbsp Water & 3 Tbsp Flax Seeds)

  • 3/4 -1 Cup Cornstarch

  • 1/3 Cup Nutritional Yeast

  • 1 Garlic Clove Grated

Seasoning

  • 1/2 Tsp Garlic Powder

  • 1/2 Tsp Salt

  • 1 Tsp Lemon Pepper

  • 1/2 Tsp Parsley

  • 1 Tsp Italian Seasoning


  • *Drizzle Olive Oil
