Matcha Banana Bread Recipe. Bake at 325 for 40 mins or until golden brown crust. Great to make for St. Patricks's Day to fit the "green" theme. This matcha banana bread is mild with the matcha flavor with a light green hue. My version of this banana is vegan. You can substitute the flax seed egg for regular egg and the vegan butter with regular milk butter. Store at room temperature, as it does not need to be refrigerated. Delicious treat with a cup of coffee for breakfast or a snack. Don't overmix the batter. Ripened banana peels that are somewhat brown are perfect to use for this recipe. Ingredients:



Mix 1

  • 1 Cup Flour (All Purpose)

  • 1/2 Tsp Baking Powder

  • 1/2 Tsp Baking Soda

  • 1/2 Tsp Salt

Mix 2

  • 2 Ripe Mashed Bananas

  • 1/2 Tbsp Milk (Oat Milk)

  • 2 Tbsp Matcha Powder

Mix 3

  • 1/4 Cup Butter ( Vegan)

  • 1/2 Cup Sugar (White Granulated)

  • 1 Flax Seed Egg (3 Tbsp Water & 1 Tbsp Flax Seeds)

  • *Optional 2-3 drops green food coloring
