Polish Borscht ( barszcz) soup that will keep you warm in the cold winter months. It is Eastern European sour soup that is made with beets. Can serve it hot or cold. This classic recipe is usually made on Christmas Eve. I cooked this on the stovetop, but can be made in crockpot for several hours on low. Wonderful source of hearty nutrients. There is other Russian and Ukranian versions of borscht stock. Optional to garnish with parsley and sour cream.

Ingredients:
2 Cups Water
2.5 Cups Broth (Vegetable)
1/3 Cup Vinegar (Apple Cider)
3 Tbsp Sugar
1/2 Lemon Squeezed
Vegetable Oil
*Optional Sour Cream
Vegetables
3-4 Garlic Cloves
3 Carrots
3 Potatoes
1/3 Onion (Yellow)
1 Jar beets (Including Juice)
4-5 Cabbage Leaves
Seasonings
Sprinkle of Salt
1 Tbsp Paprika
1 Tbsp Parsley
1 Tbsp Turmeric
1 Tbsp Cardamom
