Roasted Vegetable Ciabatta Sandwich Recipe. One of my favorite sandwich recipes for an easy meal in the summer. Inspired by Italian sandwiches! Ciabatta is a rustic italian bread that was produced in 1982. Featuring Bunnie's pre- made fresh, medium crisp ciabatta bread (Vegan) from my own kitchen! I love making a different kind of bread in my bread making machine. Vegetarian version can use regular mayonnaise, bakery bread, or real mozzarella cheese. Suggest adding the cheese in the last two minutes. If you like your bread toasted as well, put it in the oven for 2-3 minutes for your desired crispy texture. Topped my sandwich with fresh basil leaves from my garden. Enjoy this greatest vegan sandwich that will bring you summer time joy.

Roasted Vegetable Ciabatta Sandwich Recipe,  Tomato, Zucchini, Vegan Shredded Mozzarella Cheese, Roasted Red Pepper Hummus, Lemon, Ciabatta Bread, Red Bell Pepper, Vegan Mayonnaise

Air Fryer: 365 ° F

Course: Lunch/Dinner

Bake Time: 15 Minutes

Prep Time: 5 Minutes

Total: 20 Minutes

 

Ingredients:


*Premade Ciabatta Bread

  • 1-2 Tbsp Vegan Mayonnaise

  • 1-2 Tbsp Roasted Red Pepper Hummus

  • 1/2 Sliced Red Bell Pepper

  • 1/2 Tomato

  • 1/3 Sliced Thin Green Zucchini

  • 1/2 Tbsp Olive Oil

  • Squeezed Lemon

  • Thin Sliced Red Onion

  • 3-4 Fresh Basil Leaves

Seasoning:

  • 1/2 Tsp Italian Seasoning

  • 1/2 Tsp Garlic Powder

  • 1/2 Tsp Salt

  • 1/4 Tsp Black Pepper

*Optional: Olive Oil (Sprinkle Sandwich)
