Tropical Vegetable Thai Curry Recipe. Inspired yellow curry from Thailand. Healthy and easy vegan meal to prepare all in one pot! I used a premade Thai seasoning. Thai spice is filled of spicy, sweet and tangy flavor. Collection of spices included : garlic, salt, coriander, chili, chickpea, ginger, cardamom, lemon grass, celery seed, carrot, chives, citric acid, mustard powder, fenugreek, cumin, and turmeric. Yellow curry has a mild spice level. Amazing zesty recipe is great for a Spring recipe in your cook book.

2 Garlic Cloves
2 Carrots
1/2 Green Pepper
1/2 Yellow Onion
1/2 Lime
1 Cup Spinach
4 Mushrooms
2 Red Potatoes
1/4 Pineapple
* Optional Chopped Scallions & Rice
